Common Questions

How should I store this cake?  How do I cut it?  What do I do with the leftovers?  These are all questions that we get asked often here at Dessert Works so we thought it would be a good idea to answer some of our common cake questions for you.

How should I store my cake once I take it home?  All of our cakes here at Dessert Works are made from scratch with all real ingredients.  We don't take any short cuts with our cakes and pastries because we want to give you the best product possible.  For this reason, we say you should take your cake that has been frosted with butter cream out of refrigeration AT LEAST two hours prior to serving.  Since we use real butter, our cakes firm up when cold.  Though it will still taste delicious, the cake will soften and become just more enjoyable if it is left at room temperature for a few hours before you dig in.  Butter melts at 85 degrees, and ideally, you would want your cake to sit out in 75 degree environment.  We realize this is much warmer than many keep their homes, so take this into consideration.  With a larger cake, you would want to leave your cake out even longer. If you chose fresh whipped cream for your cake, you are going to want to keep the cake refrigerated until just shortly before serving so that the whipped cream is just perfect.  Other products like our pop tarts, cinnamon twists, and cookies do not need to be refrigerated at all.  If you have any questions, feel free to ask any of the retail staff and they will gladly tell you how to keep your items.

After I've enjoyed the cake, if I have leftovers, what do should I do with them?  Refrigerate.  Of course the same rules apply, if an items didn't get refrigerated before cutting, it doesn't need to be after.  It is still a good idea to bring the cake up to room temperature before enjoying again.

How am I suppose to get that many servings out of this cake?  Say you ordered a 14" cake to serve 40-50 people.  You may be wondering how you are suppose to cut 50 long skinny pieces of cake.  The answer is simple.  You don't.  Instead, take a knife and cut a circle around the middle of the cake, creating a smaller "inside" cake.  From there, on the outer section of cake, cut slices outwards to the edge.  You can then cut the smaller "inside"cake into regular servings.  For some larger size cakes, you may need to cut 2 inner circles so that you can get the proper servings. Below is a general idea of how to cut your large cake.  At Dessert Works, we have larger serving sizes than is typically used, so please take that into consideration when cutting your cake.

Meet Anthony!

Meet Anthony
Head of the cake department

Name:  Anthony LeBlanc

Hometown:  I was born in Newton and I live in Abington.

Education:  I have my Associates Degree in Baking and Pastry and my Bachelors Degree in Food Service Management from Johnson and Wales University

What does your job consist of?  I am the head of the cake department.  I work on decorating standard and custom cakes daily.  I take inventory of the cakes that we have in the store and I fill all the cakes that we make.  I also make all the mousses; chocolate, Boston cream pie, raspberry, lemon etc.  I am also in charge of pulling reports for the week to create production reports so that everyone knows what needs to get done and when.

How did you end up at Dessert Works?  I worked at Dessert Works back in the summer of 2009 as a decorator.  At the time we were in Norwood still.  I first heard about Dessert Works when I was in my sophomore year at Johnson and Wales when I was looking for an internship.  I didn’t end up doing my internship at Dessert Works but I knew that someday I wanted to work here and learn as much as I could from Kristen (Chef.)  After school, I worked at Whole Foods Market as the Bakery Manager.  I did this for just over a year and got sick of doing retail and wanted to go back to my true passion, decorating cakes.  I called the store and talked to Chef to see if there were any positions open and luckily a job had just opened up.  So, I like to think of it as fate that brought me back to Dessert Works!

What is your favorite item we have at Dessert Works?  I think I have two favorites; the chocolate mousse cake and the lemon bars! Love, Love, Love!

What is your favorite part of your job?  My absolute favorite part of the job is on Fridays when we have tons of orders and we do our decorating “rounds” as we call them.  Watching the cakes go from oven, to filling, to frosting is amazing.  I always say it takes a small army to do what we do here.  I learn new things every day and I am always working to make myself and my work better.

What you see is what you get

Do you have an event coming up and you have an invitation that you are crazy about and want to tie it into your cake?  Or, you've been searching the internet and found a picture of a cake that you just loved. Or maybe you have an idea what you want for a cake.  Whatever the case may be, we've got you covered!  Here at Dessert Works, we are able to take any image you may have and recreate it on your cake.  Here are a few examples of cakes we have done.

This first cake was for a Baby Shower.  It was an adorable forest animal theme and the customer had purchased plates that they loved.  They sent us an image of the plate they had purchased and we took it from there.  Working with the customers budget, we were able to make a cake that really showed off the theme.  Take a look!
Here is the original picture
Here is the cake version!

The next cake we would like to show is one that a customer provided us a cake image she found online.  She wanted a close replica of this cake with a few small changes.  As you can see, we got it pretty close!

The image provided to us by the customer

Our version of this Winter Wonderland!

The final cake we want to show you was a different approach.  The customer was not entirely sure what they wanted but knew some of the aspects they wanted incorporated into the cake.  We were able to work with the customers ideas and budget to create the perfect cake.  Below is a sketch that was done to show the customer and decorators just what they had in mind.

Now, while the drawing may not be museum worthy, it was able to show all the elements that needed to be on the cake.  You can also see the notes on the side about flavor, size and pricing.  Here is the fished product.

Whatever your cake needs may be, we here at Dessert Works aim to please.  We do our best to give you the cake of your dreams!

Thank you!

Here at Dessert Works we take great pride in producing beautiful and delicious products.  We wanted to take some time to thank those of you who have reached out to us and given us feedback on their orders.

This baby shower cake was a custom design done for a customer.  They contacted us 3 weeks prior to the baby shower and we worked together to create the perfect cake for their occasion.  They had a design in mind which we recreated.  The rattle and baby blocks were all custom made out of rolled chocolate, which is similar to fondant but much tastier!  On our Facebook page, the customer posted “Just wanted to thank you for the amazing cake. It looked even more beautiful in person and everyone at the shower loved it, especially the mom-to-be. The cake was tasty and everyone enjoyed it, which is hard to do in my family. We got the day/night flavor and highly recommend it. THANKS AGAIN!!!!! You’re a very talented artist.”  Thank you for the kind words and we look forward to helping you in the future.

Another cake which turned out beautifully was this Cinderella themed Bridal Shower cake.  Two weeks prior to the shower, the customer came in knowing she wanted a Cinderella themed shower cake, but was not sure exactly where to go with it.  She had purchased a glass slipper already and liked the idea of incorporating it into the cake design.  Working to keep her budget in mind, we were able to use the slipper and make a cake fit for a princess.  She also bought the small birds to go on the rolled chocolate draping, just like in the movie.  Again, this cake didn’t disappoint.  “This cake was everything I imagined and asked for and more! It was amazing for our day and was so extremely yummy the guests were talking about it all day and I could not be happier thank you so much! I highly recommend your shop! I will be back for sure!”
