Head of the cake department
Name: Anthony LeBlanc
Hometown: I was born in Newton and I live in
Abington.
Education: I have my Associates Degree in Baking and
Pastry and my Bachelors Degree in Food Service Management from Johnson and
Wales University
What does your job
consist of? I am the head of the
cake department. I work on decorating
standard and custom cakes daily. I take
inventory of the cakes that we have in the store and I fill all the cakes that
we make. I also make all the mousses;
chocolate, Boston cream pie, raspberry, lemon etc. I am also in charge of pulling reports for
the week to create production reports so that everyone knows what needs to get
done and when.
How did you end up at
Dessert Works? I worked at Dessert
Works back in the summer of 2009 as a decorator. At the time we were in Norwood still. I first heard about Dessert Works when I was
in my sophomore year at Johnson and Wales when I was looking for an
internship. I didn’t end up doing my
internship at Dessert Works but I knew that someday I wanted to work here and learn as
much as I could from Kristen (Chef.) After school, I worked at Whole Foods Market as the Bakery Manager. I did this for just over a year and got sick
of doing retail and wanted to go back to my true passion, decorating
cakes. I called the store and talked to
Chef to see if there were any positions open and luckily a job had just opened
up. So, I like to think of it as fate
that brought me back to Dessert Works!
What is your favorite
item we have at Dessert Works? I
think I have two favorites; the chocolate mousse cake and the lemon bars! Love,
Love, Love!
What is your favorite
part of your job? My absolute
favorite part of the job is on Fridays when we have tons of orders and we do
our decorating “rounds” as we call them.
Watching the cakes go from oven, to filling, to frosting is
amazing. I always say it takes a small
army to do what we do here. I learn new
things every day and I am always working to make myself and my work better.
