Meet Sara!


Meet Sara
Head of the Pastry Department


Name:  Sara Griffin

Hometown:  Melrose, MA

Education:  I have my B.A. in Biology from Colby College.  I also attended the Professional Pastry Program at Cambridge School of Culinary Arts.

What does your job consist of?  I am head of the Pastry Department.  I am in charge of sending various kinds of pastries to our retail store, completing pastry orders for whole sale as well as customers, and decorating our icing cookies.  I also help out in other departments when I have time.  I am in charge of rolling out the dough to make cinnamon twists, poptarts, pies and galettes as well.

How did you end up at Dessert Works?  After college, I worked in a science lab for 6 years.  I left to pursue a career in pastry arts and before starting pastry school, I began looking for a pastry job in the Boston area and was lucky enough to land a job at Dessert Works.

What is your favorite item we have at Dessert Works?  I love the mini milky way, the opera torte, the red velvet individual and the cheesecake pops.

What is your favorite part of your job?  I love most everything!  From helping my coworkers, to piping linzer tarts, everything is rewarding.  Call me crazy, but I love the hustle and bustle of the holiday season!

Awww nuts!! (and other allergies)

Here at Dessert Works we realize that many people have different allergies and sensitivities to various food and we strive to accommodate everyone's needs.  In this weeks posting, we want to let you know of the different items we offer to fit your allergy needs.  With all of our products, we are very aware of cross contamination and keeping work areas separate.  Below we will fill you in on some of the items we offer that fit common food restrictions.

Gluten Allergy
For those of you who are not able to have gluten, you are in luck.  We have several delicious options for you to try.  We have our Flourless Chocolate Cake which is a rich fudgy cake available in an 8" size and by the slice.  We also have a Key Lime Tart which is made with a coconut and macadamia nut crust and is available in 8" and by the slice.  Our Opera Torte is made with an almond flour.  This is not really a flour at all, so don't worry.  It is simply almonds that have been finely ground.  We layer this almond cake with a mocha buttercream and an espresso ganache and is available in individual and mini pastry sizes.  We also can make a regular size cake using our almond flour, but we do require 2 weeks notice (it is well worth the wait!)  Finally, our Chocolate Dipped Macaroons are gluten free and are just enough to satisfy your sweet tooth.

Nut Allergies
While we do use nuts in the bakery, again, we are VERY careful to keep all of our equipment and ingredients separate from one another.  We do not have any peanuts in the bakery, but we do work with tree nuts.  With that being said, you should feel confident in ordering any items that does not have nuts as an ingredient, and that is most of our bakery items.  None of our cakes contain nuts and we are happy to make special notes on any orders. 

Dairy and Egg Allergies
We offer a dairy free chocolate cake here at Dessert Works that is made without eggs or cream.  We can fill the cake with apricot or raspberry preserves and decorate it with margarine frosting.  We do have a very limited selection of these cakes available in the store in 6" and 8" sizes with limited decorations.  For anything other than that, we require 7 days notice.
